This slow cooker pulled pork is a great recipe to make ahead of time. It can be used in so many different ways. You can enjoy it alongside a salad for a quick dinner, make pulled pork tacos, or my personal favourite is to make pulled pork nachos, using organic corn chips, a big fresh salad and guacamole - delish!
Ingredients:
500g pork chops or shoulder
1 onion, peeled and chopped
2 garlic cloves, peeled and chopped
2 tsp himalayan salt
1 tbsp paprika
1/2 - 1 tsp chili flakes
2 tbsp raw apple cider vinegar
2 tbsp tamari or coconut aminos
1 tbsp pure maple syrup or honey
1 tbsp mustard
Method:

Add chopped onion and garlic into a slow cooker.

In a small bowl mix together salt, paprika and chili flakes. Rub this mixture on both sides of the pork. Place the pork into the slow cooker

In another small bowl mix together the apple cider vinegar, tamari/coconut aminos, maple syrup/honey and mustard, mix together until well combined. Pour mixture over the pork on both sides (I like to press it into the pork using the back of a spoon).

Slow cook for 8 hours (or 4 hours on high). Shred pork using two forks one cooked.
