SALAD
  1 long cucumber, sliced into half moons (roughly 4 cups)
 ½ red onion, thinly sliced
 1 avocado, diced
  ¼ cup parsley, chopped
 100g feta cheese, crumbled (I use goat's feta)
Dressing
  4 tbsp olive oil
 Juice from ½ lemon
  1 tbsp red wine vinegar
  1 clove garlic, finely minced
 ½ tsp dried oregano
 Salt and pepper to taste

Add cucumber, red onion, avocado, parsley & feta to a bowl.

In a jar, whisk together all dressing ingredients.

Pour over the salad and toss gently.
