This almond meal cracker recipe is not only super simple to make, it's extremely nutrient dense as well. It only contains a few ingredients and can be made in a matter of minutes. These are delicious topped with hummus, pate or pesto for a healthy nutritious snack.

Ingredients:

 1 cup almond meal
 1-2 tbsp ground flaxseeds
 3 tbsp water
 Pinch of sea salt

Method:

Preheat oven to 175 degrees and line a baking tray with baking paper.

Add all ingredients together in a bowl and mix together well until it forms a dough.

Place dough on a sheet of baking paper, press down with your hands and then cover with a second sheet of baking paper.

Using a rolling pin flatten out the dough to about ¼ - ⅛ inch thick. Try to keep the dough in a rectangle shape.

Remove the top sheet of paper (top with extra salt if desired) then use a pizza knife cutter to cut the dough into squares (the size/shape you want your crackers to be).

Pop the tray into the oven for 20-25 minutes until the crackers start to turn golden (the edges will go browner than the middle, if you want the middle to go browner take off the edge pieces and then pop the tray back in the oven for a couple of minutes).

Allow the crackers to cool completely before breaking into pieces. Store in an airtight container. They will keep in the cupboard for about 5-7 days.
