This vegan friendly white bean salad makes a quick nutritious lunch or dinner that is high in fibre and plant-based protein. You can enjoy it on toast or if weight loss is your goal enjoy it alongside a big fresh green salad for a lower carbohydrate meal.

Ingredients:

 1 can butter beans
 2 tbsp extra virgin olive oil
 2 tbsp nutritional yeast
 1 tsp wholegrain or dejon mustard
 1 cup celery, finely chopped
 1 cup cucumber, finely chopped
 ½ cup fresh herbs, finely chopped (parsley, dill)
 Salt and pepper to taste

Method:

In a small bowl combine mayonnaise, olive oil, nutritional yeast, mustard. Mix together until well combined.

In a large bowl add the celery, cucumber, herbs and the mayonnaise mix. Mix all ingredients together. Add the butter beans to the bowl and gently smash the beans until blended. Season to taste with salt and pepper. Serve alongside a big fresh garden salad or enjoy on toast.
