If you need dinner on the table in 30 minutes, make this sheet pan chicken and veggie fajitas.
This is honestly one of my favourite easy dinners to make. It’s so quick to prepare, it’s flavourful, delicious, and can be enjoyed in so many different ways. I love it in wraps with guacamole and fresh herbs, on top of rice, or enjoyed with fresh leafy greens for a light lunch. If you're into meal prepping, you could double the recipe and have enough for 4 lunches.

300g chicken breast or thighs, sliced into thin strips
3 capsicums, finely sliced
1 red onion, finely sliced
2 tsp paprika
1 tsp cumin
1 tsp garlic powder
1 tsp dried oregano
1.5 tsp salt
1/2 tsp pepper

Heat the oven to 200 degrees Celsius. Line a baking tray with baking paper, then add the sliced chicken, capsicums, and onion

Add all the spices into a small bowl, mix together, then season the chicken and veggies with all the spices. Drizzle olive oil on top and toss everything together really well.

Spread the ingredients evenly around the tray, then bake in the oven for 20-25 minutes until the chicken is cooked through.

Enjoy with a side of guacamole for some healthy fats, a squeeze of lemon or lime, then add your choice of carbs (wraps, rice, quinoa).
