Preheat oven to 175 degrees Celsius and line a baking tray with baking paper.
In a medium sized mixing bowl add all ingredients except chocolate chips, mix together until well combined.
Stir the chocolate chips into the cookie mixture.
Scoop out one heaped tablespoon of the mixture onto the lined baking paper and bake for 12 minutes.
Optional extra - sprinkle cookies with sea salt once cooked.
