This lentil and bacon soup is super easy to make and delicious. It’s a great light dinner option that is very warming and nourishing. You can make this ahead of time or keep it in the freezer in containers to enjoy at a later date

In a large soup pot melt the oil over medium heat. Add onion, garlic and sauté for 2-3 minutes until onion goes translucent. Add bacon and cook for 4-5 minutes until crispy.
Add carrot, celery, cumin, parsley, oregano, paprika, salt, pepper to the bacon mixture and sauté for 2-3 minutes.
Add the remaining ingredients (except for the spinach) into the pot and bring to a boil. Once boiling, lower heat to medium and cook for 15-20 minutes, stirring occasionally.
Once soup had cooked through and vegetables are tender, add the spinach and stir through the pot.
