Mix almond meal, nut butter, maple syrup, vanilla extract, and chocolate chips together in a bowl.
Slice the medjool dates, take out the pit, and fill the centre of the dates with 1-2 tsp of the cookie dough mixture. Sprinkle with sea salt and enjoy! I love these chilled straight from the fridge!
