These chickpea and tuna patties are an easy, plant-based and budget friendly high protein recipe. If you're trying to get more protein in your diet and need a break from animal proteins, then look no further and give this recipe a go! They contain tuna, chickpeas & eggs - 3 great sources or protein sources. They are also a great meal prep option or make-ahead dinner option.

These patties are super nourishing and can be whipped up in a matter of minutes like many of my recipes.

Ingredients:

 2 small cans (or 1 large can) of tuna in spring water
 2 eggs
 1/2 can of chickpeas
 1/4 cup buckwheat flour
 2 tbsp chopped parsley
 1 garlic clove, peeled & finely chopped
 1 tbsp lemon juice
 1/2 tsp paprika (optional)
 Salt and pepper
 Olive oil or butter for frying

Method:

Drain and rinse the chickpeas. Add them into a bowl, using a fork or potato masher mash them well.

Add the rest of the ingredients into a bowl and mix together until well combined.

Form into small patties. Heat a large fry pan over medium-low heat, drizzle with olive oil or butter. Add the patties to the pan and cook for 4-5 minutes each side until they are cooked through. Allow to cool slightly before enjoying!
