It doesn't get much simpler than this! You don't need any fancy ingredients, just two staple household ingredients, a fry-pan and you're good to go! This pancake is perfect for a light breakfast (especially kid's breakfasts - you could also pack it in their lunch box), it's also great as a snack (I actually just made this for a snack which I'm enjoying as I type up this recipe)!

Ingredients:

 1 banana
 1 egg
optional extras:
 1 pinch cinnamon
 ½ tsp vanilla essence
 extra egg (if you wanted to boost protein intake or make it a bigger meal)

Method:

Heat a large fry pan with 1 tsp coconut oil. Mash the banana with a fork until it forms a paste. Crack the egg into the banana and mix together until well combined, (I added a pinch of cinnamon - because I'm obsessed with cinnamon and also it's delicious!).

Add 2 tablespoons of batter at a time to the fry-pan. Cook for 1-2 minutes until golden brown and flip, then cook for another minute.

Top with desired toppings: additional banana, greek or coconut yoghurt, pinch of cinnamon, pure maple syrup.
