If you haven't jumped on the healthy pancake bandwagon yet I highly recommend you get on board! This oatmeal and banana blender pancake recipe is so quick and easy and it tastes absolutely deeeeelish. It's a fantastic post-workout breakfast or everyday breakfast.
Ingredients:
½cupoats
½banana
1egg
2tbspunsweetened almond or coconut milk
1tspbaking powder
½tspcinnamon
1-2 tbsp of coconut oil (for the pan)
Topping options: 1/2 banana, a handful of berries, yoghurt, sprinkle of nuts/seeds, 1-2 tbsp nut butter
Method:

Add all ingredients into a blender (except for the coconut oil) and blend together until smooth.

In a fry pan over medium heat melt the coconut oil, then spoon the mixture into 3-4 small pancakes.

Cook on the side until they start to bubble (roughly 2 minutes) then flip them over and cook for another 1-2 minutes until the middle is cooked through.

Pile on your plate and top with your desired toppings and enjoy!
