Doesn’t get much simpler than this - miso chicken one pan meal! I’m on a mission to show you that cooking and healthy eating shouldn’t be time consuming or boring. All the meals I share with you are meal I cook in my own home, they are all simple, contain staple household ingredients and of course are super nutritious! Chicken and veg can be boring over time, by adding a delicious dressing or sauce you can really change up the meal to make it more exciting and enjoyable.
Ingredients:
2chicken breasts (150-200g)
1bunch of asparagus, chop off ends (or swap for green beans/broccoli if not in season)
1large eggplant, cut into large circles
1sweet potato, sliced into rounds (swap out for carrots for carb free version)
2-3 tbsp olive oil
Sea salt and pepper to taste
Dressing
2tbspmiso paste
1tbspmaple syrup
1tbspextra virgin olive oil
2tbsptamari
Juice from 1/2 lemon
Sea salt and pepper to taste
Method:

Preheat the oven to 180°C. Line a baking tray with baking paper.

Arrange the asparagus, eggplant, and sweet potato on the baking tray. Nestle the chicken breasts in the middle of the tray.

Drizzle olive oil over vegetables and season with salt and pepper

Mix all sauce ingredients together in a small bowl, whisk until combined. Spoon the mixture over each chicken breast.

Place the tray in the oven for 25-30 minutes until chicken is cooked through.
