Rice cake bites are becoming quite popular these days, so I thought I would try make a blood sugar friendly version. Rice cakes have a huge impact on blood glucose levels, especially when eaten alone, so if I'm going to use them as an occasional snack I'm going to find a way to make sure it's blood sugar friendly. These bars are a simple no-bake snack, they are crunchy, chewy and delicious! They are also great for kids too!

Line a loaf pan with baking paper.
In medium size bowl mix together the almond butter, hemp seeds, honey, salt, vanilla until smooth.
Crumble in the rice cakes and mix together.
Pour mixture into the loaf pan and pack the mixture tightly.
Melt the coconut and coconut oil in a fry pan over medium heat and stir-together. Pour the chocolate mixture ontop of the rice cake mix and spread evenly ontop. Pop the loaf pan into the fridge for 30-40 minutes until it's set. Then slice it up, top with extra salt flakes if desired and ENJOY!
