A healthy version of a classic dish. This beef meatballs on zoodles recipe is another simple and super yummy meal which is perfect for anyone wanting a healthy and easy dinner after a long day. It's also a fun way to get kids to eat more veggies. It’s full of protein and healthy fats which our bodies need to support stable blood sugar levels and keep us satiated.

Ingredients:

 500 tsp beef mince
 1 egg
 ½ onion, roughly chopped
 1 tsp tamari
 ½ tsp chilli flakes
 ½ tsp dried oregano
 ½ tsp sea salt
 Pinch black pepper
 1 can tomato & basil pasta sauce
 6 courgettes, spiralized
 1 avocado
 Fresh parsley, finely chopped
 1 tbsp coconut oil, for frying

Method:

Add mince, egg, onion, tamari, chilli flakes, oregano, salt, pepper to a food processor and process together until ingredients are well combined (mine turned into a ball). Alternatively, you can combine these ingredients together into a mixing bowl and mix together with your hands until well combined.

Use your hands to roll the beef mixture into golf-ball sized balls. In a medium-sized pan over medium heat, melt coconut oil, add meatballs to the pan.

Fry the meatballs for 15 minutes, turning them around every 3-4 minutes to ensure they are cooked through on all sides.

After 15 minutes add the tomato and basil pasta sauce to the pan, reduce heat and let it simmer with the meatballs for 5 minutes.

While the meatballs are cooking make the zoodles. Cut the ends off your zucchini and spiralize in a hand-held spiralizer or a spiralizer machine. Alternatively, use a julienne peeler and slice the zucchini lengthways.

Thinly slice or cube your avocado and add this to the zoodle mixture.

Add zoodles and avocado to a bowl or plate, top with meatballs, sauce and garnish with freshly chopped parsley.
