These almond and coconut chicken tenders with honey mustard dipping sauce are not only super delicious, they are gluten free and super easy to make. You can enjoy them as a high protein snack, for nibbles if you have friends or family over, or it’s a great dish to make to enjoy alongside a salad for a simple dinner, kids will love them too!
Ingredients:

Pre-heat oven to 180 degrees Celsius and line a baking tray with baking paper.
Add two eggs to a small shallow bowl and whisk together.
In another small bowl add the ground almonds, coconut, garlic powder and paprika and mix together with a fork until combined.
Dip the chicken tenders into the egg mixture and then the almond and coconut mixture. Ensure it is fully coated. Place onto a lined baking tray and then place into the oven for 20-25 minutes or until fully cooked through.
To make the dressing add all ingredients into a small bowl and mix together until well combined.
NOTE - pair with a fresh salad for a yummy healthy dinner.
