Easy Prawn Curry

This easy prawn curry dish is a staple in our home!! It's so simple to make and of course is so nourishing and delicious!! It's loaded with good for you ingredients such as: healthy fats from the coconut cream, protein from the prawns, fibre for a healthy microbiome from all the veggies, organic rice for a wholefood carbohydrate source., and it also has anti-inflammatory benefits from the turmeric.

 500 grams of prawns (tails removed)
 3 courgettes, cut into half moons
 1 red capsicum, cut into 1 inch pieces
 1 onion, peeled and chopped
 1/2 - 1 cup cauliflower rice
 1 can coconut cream
 1/2 - 1 cup bone broth (depending on how much sauce/liquid you like)
 1 tbsp curry powder
 2 tsp turmeric
 1 tbsp dried parsley
 Salt and pepper to taste
 Olive oil
 1 cup cooked organic basmati rice
 Fresh coriander to serve

Heat a large fry pan or wok over medium heat. Drizzle with olive oil, add onions and fry for 2-3 minutes until translucent.

Add the vegetables, coconut cream, bone broth, herbs and stir-together. Cook for 3-4 minutes until they soften a little bit, then add the prawns and stir-together until prawns are cooked through.

Add cooked rice to a bowl, pour the curry on top, season with salt and pepper then top with fresh coriander.
