Creamy Shredded Chicken Salad

 500-600 grams cooked shredded chicken
 3 cups celery, diced
 1 red onion, peeled and diced
 2 cups of cucumber, diced
 1/4 cup fresh herbs, finely chopped (parsley/coriander)
 3 tbsp my homemade clean mayo (recipe on my website)
 3 tbsp dijon mustard
 3 tbsp extra virgin olive oil
 1 tsp Himalayan salt and freshy ground black pepper
 Serving option - salad greens, cos lettuce, or crackers if you fancy

Add all ingredients into a medium bowl, mix together until well combined. Enjoy ontop of salad greens or cos lettuce for more crunch.

If you're making this during meal prep - divide the salad into 3 glass or stainless steel lunch containers.
